Orange cheesecake with dark chocolate

Ingredients

125g butter
250g digestive biscuits
2 tbsp brown sugar
250g cream cheese
Zest from 2 oranges
Juice from 1 orange
3 eggs
1.5dl icing sugar
3dl whipping cream
100g dark chocolate with orange flavor

Do this

  1. Set the oven to 200 degrees.

  2. Melt the butter and then mix it together with the digestive biscuits and brown sugar. Press the mixture into the bottom of a springform pan, lined with baking paper, and bake in the oven for about 10 minutes. Place the cake base in the refrigerator to cool afterward.

  3. Mix together the cream cheese, orange zest, and orange juice.

  4. Separate the egg yolk from the white and whisk the egg white into stiff peaks. Then whisk the yolk together with the powdered sugar until light and fluffy in a separate bowl. In a third bowl, whip the cream until fluffy.

  5. Chop the dark chocolate.

  6. Combine everything and spread the batter over the base. Place the entire cake in the freezer for at least 5 hours. Once the batter has frozen completely, it can be stored in the refrigerator before and after serving.
