Raspberry drops

Ingredients
200g fresh raspberries
8 gelatin sheets
1 dl water
2 dl sugar
4-5 tbsp glucose syrup
1.5 tsp lemon juice

Blend the raspberries into a puree. Strain out the seeds so that the puree becomes completely smooth. Measure out 1 dl of puree and set aside.
Soak the gelatin sheets in cold water for about 10 minutes. Bring the water, sugar, and glucose syrup to a boil in a saucepan. Use a thermometer; boil until the mixture reaches 140 degrees. This takes about 25 minutes.
Then add the raspberry puree and continue to boil the mixture until it reaches 110 degrees. Then take the saucepan off the heat and stir in the gelatin sheets so that they dissolve. Add the lemon juice.
Pour the mixture into an oiled, suitable silicone mold. Let it set at room temperature for about 4 hours. You can squeeze the raspberry jellies through the silicone mold now and then to see how they feel.
Press the raspberry jellies out when they are firm and roll them in sugar.
