Carrot cake with lime frosting

Ingredients

3 eggs
3 dl sugar
3 dl gluten-free flour
1 tsp vanilla sugar
2.5 tsp baking powder
2 tsp ground cinnamon
1.5 tsp ground cardamom
1 pinch of salt
1 1/2 dl rapeseed oil
5 dl freshly grated carrots

Frosting:
60g butter
4 dl powder sugar
1 tsp vanilla sugar
Zest from one lime
100g cream cheese

Do this

Preheat the oven to 150 degrees.

Whisk the eggs and sugar until fluffy. Mix all the dry ingredients and stir them into the batter. Add the oil and finely grated carrots.

Grease a springform pan and bake the cake in the middle of the oven for about 45 minutes. Test insertion with a toothpick - it should come out dry.

Let the cake cool.

Whisk all the ingredients for the frosting together and spread it on once the cake has cooled completely.
