Passion fruit candy

Ingredients

10 passion fruits
8 gelatin sheets
0.75 dl water
Juice from 1 lime
2 tsp lemon juice
2 dl sugar
4-5 tbsp glucose syrup
Sugar for coating

Do this

Scoop out the passion fruits. Then blend the contents with a hand blender, this will separate the seeds from the pulp. Strain everything a couple of times so that all seeds are removed from the juice. Set aside.

Soak the gelatin sheets in cold water.

Then bring water to a boil with lime and lemon juice, sugar, and glucose syrup to 140 degrees. This takes about 15 minutes.

Then add the passion fruit juice. Continue to boil the mixture to 110 degrees and then remove the pot from the heat. Stir in the gelatin sheets.

Oil a silicone mold suitable for candy and then pour the passion fruit mixture into the mold. Let stand at room temperature for about 4 hours. Squeeze the outside of the silicone mold to see if the candy is ready. They should feel like gumdrops.

Remove the candies from the mold when they have set but are soft, and roll them in granulated sugar.
