Smashed new potatoes with feta and panko

Ingredients
0.5 kg new potatoes
25 g butter
1 bunch parsley
150 g feta cheese
2 cloves fresh garlic
50 g panko

Pre-heat the oven to 200 degrees.
Boil the potatoes. Meanwhile, mix room-temperature butter with garlic and parsley, season with salt to taste.
Toast the panko in a dry pan.
When the potatoes are done, place them on a baking sheet and press down with something flat that can withstand heat, for example the bottom of a sturdy glass or a cup so that the potatoes are lightly crushed. Place about a teaspoon of the garlic butter on each crushed potato. Bake the potatoes in the oven until golden, about 15 minutes.
When the potatoes are done in the oven, remove them and sprinkle with crumbled feta cheese and toasted panko.
Decorate with a little chopped parsley.
Enjoy the potatoes as a side dish for grilled food or as a tasty appetizer!
