Satsumas kick off the Spanish citrus season
Satsumas are the citrus fruit that kick-starts the season and are thus autumn's first Spanish citrus fruit. The fruit is characterized by its yellow, thin, and slightly salty peel. It is seedless and has a fresh taste.
One thing worth knowing is that early satsumas sometimes have a peel that shifts toward green; this does not mean the fruit is unripe. The green peel indicates that the nights are still warm this early in autumn and that the chlorophyll has not yet broken down, which happens when the temperature drops. As the nights become colder, the peel turns into a clearer and eventually darker yellow hue.
